For one thing 1960 has hydraulic lifters, while '57 are mechanical. Thus the newer runs smoother and needs less maintenance.

Looked it up for the hell of it. The 57 lists at 140HP and 8:1 compression, the 1960 at 135HP and 8.23:1. I wouldn't let that sway me. I would go more by mileage, condition, completeness and price.
1954 STICK 235 and 1955 STICK 235 still had solid lifters, in p***enger cars. The switch to ALL hydraulic lifters in the 235, came in 1956, for p***enger cars.
