Not really HAMB type cars, but Orlando Speedworld drag racing track is on far east side of town on hwy 50. Unless weather is bad, they have activities most weekend days and nights. Daytona Speedway is east on I-4, right where it meets I-95. I think there is some kind of stock car museum there? I'm sure there are locals that may know of car show or cruise while you're in town.
Sweating is very traditional and you can do a lot of it in Orlando this time of the year. I would definitely drive up to Garlits Museum, as suggested.
I was in Orlando in August for about a week about 20 years ago at my sons baseball tournament. I asked servers and clerks why they lived in Orlando. They usually answered with their personal stories. Then I specified that the real question was why do humans live in Orlando. It was misery. I still don't know why it's inhabited.

Oldtown in Kissimmee had a Saturday evening cruise when I was stationed there half a life time ago. It looks like they still have it. Probably more OT stuff than what we like, but cars nevertheless. And free and entertaining.
I lived down that way when I worked in the defense industry. Even when I am clearing my Western NY driveway 30 years later in February I am thankful I moved. It was dirt cheap living there too, now not so much.
If'n it ain't raining buckets it's hotter than f*#k and sometimes both at the same time. We get a local show every last friday of the month ( i think) on south 200 at the big lots in Ocala
Visiting Orlando without seeing Garlits is like making wroom wroom noises in your Hot Rod in garage only. Old Town cruise may or may not have Hamb worthy rides but the place is cool and the beer is cold.
Old Town Kissimmee on Saturday from 1 to 9 pm is definitely worth checking out. And here is a listing of other car shows in the area. I haven't been to it yet but they hold car shows sometimes.
A little late to the show, back home weeks ago. It was very hot, humid, and miserable. Not fit for man or beast. Don't know how anyone can stand to live there in the summer. Only went there because my significant other had a speaking engagement there. Will never go back in the summer. Winter yes.
