I've found on rougher bare metal areas that trying to polish usually leaves a hazy residue you can't get off. I used to exclusively use polish on mine, now I'm a convert to Patina Sauce. A much better result with a lot less time and effort. Just my experience.
A scrub with a scotch-brite and clr and you may be amazed how much paint is under some of that surface rust. I know I was on mine. I tried a bunch of stuff including polishing and I've settled on Patina Sauce as my choice of protectant.
Wow! That is pretty much how I want to make this one. You check all the boxes....flathead check , 16 inch wire check , fenders check , patina check....I hope you don't mind me poaching some of your ideas.
Sand and buff like normal. Use an old pad. The wash it. The compound will clean up EZ. The old paint will shine up.
Old paint yes. Bare metal, chalky. It looks great at first, then turns chalky. You can get it back, but it gets worse and worse. That has been my experience. I've found Patina Sauce to be a much better solution for my stuff.
Back to the topic at hand, I'm stoked on the Western Canadians building 28/29 RPUs on here as I'm building one too. I wish I found one as complete as you did to start with but my parts pile is growing.
Looks like you got a good ,solid one to start with. Mine was apart, and the chassis and running gear was painted, with new tires. I went a different route with mine, but they are cool, no matter how you build them.

Great score, I wouldnt be able to help myself and would be ripping those fenders off. That being said, your car, your call! Now, go buy a gallon of Gibbs, best money you will spend.
I was pretty surprised to find one in such complete and solid condition. The hood top and gas tank don't have any dents,the tops of the bedsides are straight and not dinged up , the running boards aren't all danced on . The floor under the seat seems to have most of the rot but it's probably the easiest panel to replace. I really like the patina! I never thought I would be the guy to say that.
A-V8 , 16 inch wires with bigs and littles , column shift , welded QC , leave the patina at least to start with , I'd like it to be like a hillbilly shine runner .
