Not a line per se, but one of my favorite scenes is when Robert Mitchum flicks the cigarette butt over and hits the guy in the other car during a chase. I also really dig the scene in Bullitt when the bad guy figures out what's coming next and cinches down his seat belt.
Not exactly a car movie but a cool car scene from Fast Times at Ridgemont High. The two teenagers were out thrashing in the younger teens older jock brother's Z-28. They wrecked the car and the younger kid panicked and kept repeating "my brothers gonna shit, he's gonna kill us" to that the other replied "Make up your mind dude. Is he gonna shit or is he gonna kill us?" "I can fix it, my brothers got the most awsome set of tools!"
The signature line I use is the only good part of "Stroker Ace". It's from the very beginning of the movie when Stroker and his buddy are kids riding with his buddies dad in the old Ford "shine" truck.
