I need schooling on flathead carbs.

I have a 1950 ford and I have rebuilt two different stock carbs. Is their a better carb to use? whats the difference (if any) between the Ford, stromberg, zenith, holley version?

 

by the way, both attempts at rebuilding resulted in a poor/inconsistent idle or shut down. I need something dependable.
