the chevy valves are a bit longer, great for a high-lift cam (400jr, etc).

I don't doubt that that was a good idea in 1950, but today there are better choices that are more easily obtained.

I am following the red book; HOW TO HOP UP FORD & MERCURY V8 ENGINES. It mentioned Desoto 6 valves for the intake of the flathead.

Are you talking valves from a flathead Mopar six, or from a slant six? Honestly, 1.6 inch exhaust valves from a SBC adapt well to Ford...
