Personally, I haven't seen any rims that tall in a stock rear fender well. I'm not saying it can't be done, anything's possible. If you do get an 18 x 8 under the back, I would think it would be a bear to change, especially on the side of the road should you get a flat. What you have on there looks pretty good. Just my $.02 worth.

Running 17x8 and 17x7's. Actually, with the 17's, the rear tires are EASIER to install/remove than the 15's because of the additional opening on the rear of the wheel. 18's should be as easy if not more so, just don't go too tall/wide for your opening. My tires are 245's on the rear, 225's on the front. Backspace is 4.75 on the rear, 4.5 on the front.

This Mustang 17" wheel actually fit in the shallow wheel well of a '54 Ford nicely if you have the old drum brakes you will have to install longer studs and a 1/2" spacer to clear the hub and tie rod on the front.

18" WHAT ??? You have got to be kidding with us all here , right ? Yea it's your ride and all but are you really considering putting on those big damn wheels just like Chip Foose always does to all his Resto Mods he builds ! Personally I hate to see anything with a wheel bigger than a 15" size but that's just me I guess . Maybe a 16" like some of the Fords came with but none of those gaudy looking wheels they are making now .
