Has anybody changed to a cable operated gas pedal, and if you have which one works the best.

I bought a throttle cable at Autozone for my 56, I think it was about $20. I'm so cheap, I adapted my stock pedal to work with it. It's ugly but it's free and works.

I used one from an early 70's Ford. I did have to make a mountin g pad for it and weld it to the floor but it is easy if you have a welder.

I used one from a 76-85 Chevy van on my 54&55 Ford. It has a cable to carb and only takes three bolts to mount to fire wall. It looks clean and I can pick them up at pick-n-pull for 5 bucks.

Locar is the best one to get as they are very good quality and you will never have a problem with them .
I am sure if you take a day and hit a U Pull It salvage yard and hunt for a few hours , you can find one that will work for a few dollars , but unless you are strapped , then just buy a Locar and trouble solved .
