I bought a 28 ford coupe that was all in pieces. I can mostly see how the body goes back together however I cant work out how the rear quarter panels attach to the floor subrails. I can see that the quarter panel was spot welded at the door opening. I can see that the panel bolts to the roof panel. I cant see any attachment points along the entire lower part of the panel though. It looks like they dont attach at all? Can anyone give some advice or post pictures?

Do you mean a 90 degree fold or back on itself pinching the subrail?

Rusty Rocket is correct, the panel folds over similar to a door skin and then just tack weld. That is how I did my 29 Tudor.
