Where is the best place to put the temp probe for a mechanical gauge on the front of the manifold or on the rear? Any input appreciated.

The front will give you more useful info, since that's where the coolant is the hottest

You have to bend over if you use the rear for a probe.

I'd put it near the thermostat housing. Or radiator in that will be your highest temp.
