HAMB BBQ Chipotle Green Salad Recipe

    The other day a HAMBer PM'd me asking for the recipe for the salad I've taken to a few of the local HAMB BBQs and just now while making a tortilla run to the Ralph's around the corner I ran into Dante and Plan9's wives, (well, actually I was walking by oblivious to my surroundings as usual, when they hollered out "DrJ! from their car,) and they asked me to post the recipe here, so here it is:

    Chipotle Green Salad
    ____

    Romaine, a couple or three heads, cut up

    Carrots, shredded

    Tomatoes, I use Roma, seeded and chopped.

    Corn, I use the Trader Joe's "Fire Roasted" frozen corn that's sorta fat like posole but any corn will do.

    Green onion, chopped

    Cheese, I use Trader Joe's "Fancy Shredded Mexican Blend", which is Queso Blanco, Cheddar, Monterey Jack, and Asadero Cheeses.

    Black beans, drained canned, or fresh cooked if you want.

    Dressing, mix "Original" Ranch Dressing with some Chipotle Sauce, which is a Habanero Sauce or whatever red chili "taco" sauce you can round up.
    Don't go crazy with it but enough to taste and make your brow sweat a little by the time you finish... ;)
    Maybe 4 parts Ranch to one part chili sauce?

    I put chopped cooked Chicken in it some times, but that's optional.

    Toss it all together as soon as the BBQ cook has the Carne Asada ready. :cool:

    I'd give amounts but they depend on how much salad you're making and how much your kids or you like the different ingredients so just figure each one as "enough" and don't drown it with too much the dressing!

    Anybody else got a picnic recipe to add?

    Manifold-grilled cheese sandwichs or burritos?
    (I made a grilled cheese sandwich on the electric coffee maker hotplate when I was in rehab.)

    Anything?

  3. Well, I'm the guy who asked Dr J for his recipe. I added some avocado and some black olives to it. It was gooooood.
