Man, that is awesome! I'm blessed to be married to a "car girl" too! Give her a big hug every now & then!
Some guys have all the luck. "Hey Honey, I want a new car, maybe an SUV?" "I know, let's look at a cl***ic that will hold it's value, be unique and we could restore it together." "Whuh?" You know, something from the 40's or 50's would be boss, and it would be a real head turner and .." *SLAM!* "Move over, Rover, make room for the big dog."
I have looked in the Willys repair manual for the carb adjustment but I can't seem to find the correct page LOL >>>>.

Tunisian Red on one, wood finish and hubcaps on the other. 1949 was the first year for the 4wd option, very rare.

FWIW when I was 15 my dad and I stopped in a Jeep shop/yard in Boise ID, when I was looking through the stuff around the shop I found a flat fender (not sure if 2A or 3A now) Jeep with a flathead in it, complete with stock 3 sp and pto winch. Not that I would go out of my way to keep the T90 3sp, but it has be done with a flatty in a smaller Jeep than the station wagon. I always understood the "first all steel" wagon comment was qualified like everything in life as the first factory produced wagon with no wood structure for support. Could be wrong as I haven't really looked at many old burb's and such.
If you love this woman, & you do truly want a "daily driver" (meaning that if runs & drives daily), you'll abandon both of these options & install a SBC or SBF. I don't mean to rain on your parade but you could turn her against this old stuff in a hurry with either of the powerplants you've mentioned. Cool project. Keep us posted. JH
