So-Cal Speed shop in phoenix is a must see. Squeegs Kustoms in Chandler. Those are the two I can recommend.
if your not venturing out of mericopa county.. check out desert valley auto parts.. in chandler i think. google. it or some other hamber will chime in about where it is. prices are outrageous but a lot of cool vintage tin... but ya know.. if ya venture out of phoenix and go up north.. there's route 66 a teepee motel, jerome, the gold king mine outside of jerome. the gold king mine is a must.. don and all his old toys.. and a 12k ci 3 cylinder named big bertha. that still runs.. and its only 2 hours outside phoenix,,

If you get to the West side of town you should drop into Industrial Chassis. Steve alway has something cool going through there.
The Barret-Jackson auction is a must. You can scalp a ticket in the parking lot on the cheap. Take your camera because the cars are great and the people there will leave you speechless. Then take a cruise over to Firebird raceway and check it out, hell ,they might even be racing. Then go grab lunch at the In&Out burger on Ray Road. The auction, Firebird, and the In&Out are all right on I-10 so you don't have to venture all over creation. Have fun!
thanks for the Squeegs kustoms and Jerome recommendations. i went to desert valley last year, and took 125 pictures, beautiful tin. thanks again everyone, hard not to hit in&out burger, its like coming to this side of the Mississippi, and not eating at least one white castle burger.

Saturday afternoon and evening is a pretty big car show at the Pavillions in Scottsdale, Indian Bend and the 101 Pima Freeway. Just a few miles south of the BJ auction. Eat at YC's mongolian while at the show!

There's an auction (big buck cars) at the Biltmore, 24th St and Camelback and another auction at one of the casinos.
I also think that there is a show the Hell City Saints are hosting at the Rythm Room.. Plenty to do just need to figure out what you would like to do.
Yes, tons to do! Just remember that Phoenix is a pretty sizable town, and traffic is always... just leave yourself time when going from Scottsdale to West Phoenix.
