If auto, 700R (4L60) or 200R as non electric, later 4L60E is electric and requires a computer. 200R is approx 2" shorter in length than a 700R. As an example my '35 runs 3.5:1 rear with 235.75.15 tyres and turns 2k rpm at 60mph.
As stated, the 700 r4 and the 2004r are good units if your 327 is a chevy engine. The plug in the side of the trans is for locking up a torque converter if you choose to have one. Also, you will need a tv cable and the bracketry to hook it up to the carb. The 700r4 has a 3.06 first gear and a big jump to second while the 2004r is much more evenly spaced. A good core for the 2004r can be found under a Cadillac. You can also get the tv cable, and brackets for a q-jet from the save vehicle. It will have the AA code on the tail tag on the p*** side. if you are thinking manual trans and you don't need to shift quickly a newprocess is cheap with about 30% overdrive but you will have to change the clutch plate.
