My new project! 1953 chevy

So I just got a car, and my first big project. I'm hoping to make a nice street rod/gasser out of it.

Ok guys so i need some advice. I was thinking about taking my car to this guy I know shop, who restores model A's. I thought it would be good becouse he has air, a sand blater ect, but he is kind of a my way or no way kinda guy. I want to pull my car off the frame and sandblast it, and start the build right. Get rid of all the rust, run all new brake and fuel lines, and sand blast and restore all the suspension before the body goes back on . He thinks I should just get it on the road. Run it as it is now and worry about the body later? Should I just keep it where i Can do it how I want? I think becouse its not his car, hes not worried about it.
