How much clearance do you need between the rear tire and the body, so it doesn't rub in turns etc.

I'll let you know when I get there, lol. More than 3/4" on my car. I'e got low flat top fenders which make it harder.

Depends on what type of rear suspension. With a panhard bar to locate the rear you can get by with less clearance. I've got about .5" and never rub with my panhard bar.

I can only stick one fender between my tire and fender. Close, but it doesn't rub.

I build most cars to 1"

A panhard bar still move the axle slightly one way or the other (depending on length and amount of travel) but the real issue is during articulation, when one wheel is moving more than the other - like turning in to a driveway with some angle

Sidewall flex/walk also plays into space. Most my cars are 1" as well.

    1/2" is a gamble, 1" is a sure bet.

I have about 1.5" between the qtr panel and the front part of the tire. Seems tight enough!

It depends on the tire and the suspension. If you've got really positive lateral location some late-models will go down to considerably under 1/2in static. A Panhard typically results in < 1/8in side-to-side displacement. Soft leafsprings on a stick axle, lots.
