    Your uncle left you with a valuable car. Don't fret about the corrosion in the lower extremities. They pretty much all have corrosion there at some point even if garaged their whole life. FoMoCo put no corrosion protection on the inside of the rockers and the cars suffered for it. The rockers are expensive but at least they are available. There is enough left of the quarters that they can be repaired if you are, or you know a good metal man. Look up the Mercury parts thread for info on metal floor parts, rockers, and general parts suppliers. The Merc 255 V8 is a sweet unit when running well. I hope your uncle kept the engine dry. They are prone to corrosion in the cylinders and stuck valves if not stored well. New fuel tanks are available but they don't have the original sending unit type port in the top. The aftermarket senders are ****. I've cleaned several of the original tanks & sealed them and they are still in good shape.
