FWIW I would try the 18" w/o a shroud. If it overheats then I would go with the16" 6 blade steel fan and a good shroud. I run a 16" in my race car...

See that the cowl vent and a couple of door hinges are missing. Chop looks great in the pictures. Does the windshield still crank out?

I used a Zip riser to raise the fan up on my '32 roadster and it works great.
I use a 600 cfm Edelbrock on my street driven cars. Works great if you don't care how it looks.
6 volt fords are positive ground. Not sure this would cause the problem you describe
