Easiest swap but difficult to find would be a factory 3 speed trans with OD. Or go with a T-5 5 speed with OD...

With a mild 350 I'd look at an AX-15 or T-5 trans. More "car like" and better ratios for daily driving, unless you use your truck as a TRUCK then...
