Hot Rods 303 Olds. head question

    I am replaceing the head gaskets on a 303 Olds. in a 40 ford coupe and need to know if some things I have found in the block are right.
    In the block under the head there appears to be freeze plugs in the front top water ports just in front of the front cylinders on both sides, also the lower two front water ports appear to be restricted.
    We also noticed that the longer head bolts seemed to be different in that some were shouldered and some were not. Are the shouldered ones the org.
    ones?
    Lastly should there be dowels in the lower part of the block for the head to sit on?
    Any info. would be appreciated
