I want to keep the drums on my '53 F100, but install a '67 Mustang dual reservoir master cylinder. Research shows the stock mc bore to be 1- 1/16". The Mustang mc bore is 1", which yields a piston area that's 88% of the original piston area. Theoretically, this will increase pedal travel. Is it a noticeable increase? Anybody done this conversion? Comments?

Brake shoes adjusted properly, it'll actually have the same amount of pedal travel and be easier to stop.

I don’t know if your 1/16” will be noticeable. I went from 1 1/8” to 1” and that was noticeable.

That results in a reduction in piston area of 21%. I would think that would be a lot more noticeable than the 12% when going from 1-1/16" to 1".
