Has anyone heard of or can tell me where to find a 6 volt air/fuel sensor kit?
Would need a 6 volt 02 sensor and guage.
If not is there a way to monitor air/fuel ratio without this setup?

What are you running for an engine? If it is a 4 banger then all you need is your eyes and ears.

True. At the same time, most engines weren't very well tuned, as long as they ran seemingly good people used them, not many spent the time for trial and error adjustments until perfect - and then readjusting over time as conditions changed.
An O2 gauge can speed up and simplify the adjustment process quite a bit, and if left in the car over time it can show you something that needs attention is going on long before the car starts running so poorly you notice it in regular daily driving.

A 6 to 12V boost regulator would also be my choice for a situation like this. (Or possibly a full 12V conversion, if the 6V system has too many health issues already.)

Connect it to any 12V battery, which you place in the footwell and secure.
    It's sufficient for adjustment.
