Are there any shops in Minneapolis/St Paul MN that build (traditional side of the spectrum) hot rods and kustoms?
I'm considering moving out there for family, but I'm not going if there are no cars, or jobs in my (un)employment field.

There is a place in Monticello Minnesota that builds traditional cars. Thet also put on a great car show every summer.

Talk to Jordan (-J- on the Hamb) him and his brother own and
run the place. A few other shops in the area but not really traditional in style.
