I am having a problem routing the brake hoses on my disc brake conversion so they won't bind.
If I grind a small tit of the brake caliper where the hose mounts, will this hurt the caliper?

Probably not, but do you have a picture so we can make an informed recommendation.

I usually install a regular bolt into where the banjo bolt goes, so I don't accidentally hit the sealing surface with the grinder. On at least 3 of the last 4 disc brake conversions, I've had to grind the calipers around where the hose mounts for routing reasons.

Grind away. I've had to do that before, and even grind on the caliper for wheel fitment. No issue.
