What is the pros and cons of copper brake lines? I am thinking of using them on a new project I am working on simply because of bendability.

Buy yourself a quality bender and use the correct stuff. If I'm correct, some DMV inspections prohibit copper brake lines, check with your state DMV.
Cunifer (copper, nickel, iron alloy) is what you want. It is very soft, easy to bend, flares don't crack and is used by one of the high end Germans. (I think BMW) As woodiewagon46 mentioned, it looks a lot like plain copper tubing, so inspectors aren't going to know the difference, ask your DOT.
I have used nicopp very easy to use in every respect flare bend etc.never found a need to use extra clamps.I am sure you can not use copper but did see it back in sixties on some.when I found a power brake set up for my car it was plumbed with copper.I sure if you search nicopp it will open your eyes to the use
