Dry Vs. Wet building.

So my project truck is on the frame table for mock up. I am torn between A full blown wet build drive it around find any gremlins or things that need to be changed and then blow it apart for finishing. At work we dry build everything mock it up blow it apart for paint and assembly then shake down any unseen issues during mock up. There are pros and cons to each.

just have this feeling once the truck is running i won't want to take it apart

Any input?
