I just got an edelbrock 553 3x2 setup with polished carbs, linkage and lots of other stuff for 500 bucks. I know I got a pretty good deal but I know there are a few different edelbrock 3x2 setups and my question is what motors does this intake fit? will it fit a 239 or 256cid engine? or is this an intake specifically for the 292-312cid engines?

    It's for 1955 heads (272 & 292). Check for port mismatch on 239 and 256 and later 292 & 312's.

Actually the 272 and early 292 55-56 small port, here is a real good discussion to help you out:http://www.fordbarn.com/forum/showthread.php?t=98262 also this is good source of info:http://victorylibrary.com/mopar/edel.htm Now with that info you have an option, the 1954 heads had the lowest compression ratio only 7 to 1, swap to these 272 heads ECG-A or ECG-C and you will have an 8 to 1 ratio and bigger valves or the ECG-D milled .030" either way it will be a big improvement and still like low octane regular.
