If I change out the pumps one at a time will I need to provide support for the motor? Perhaps supporting at the exhaust manifold would be alright? Tips?

just loosen the mounting nuts, lift engine to take the weight off, pull pump, fix pump, reinstall..if you want some more practice, cruise down and fix the leaky one on my merc:D

The problem won't be the support, the problem will be the "hidden bolt" inside the water neck. If you are extremely lucky, you will be able to get a wrench on it and actually unscrew it out of the block. If you aren't, lets just say it can go any way from breaking or cutting it off (the bolt head) and then spending hours trying to take what used to be a bolt that has now rusted into an integral part of the block. I've heard of people drilling and drilling until the finally just drill the bolt out and put a threaded insert to replace the threads.

Support from the manifolds should work but I would use a cherry picker and put a pad and a jack under the oil pan and provide gentle upward force after unbolting the engine mount part of the water pumps.
