Are you talking mechanical of EFI, I have an early Hilborn mechanical unit, for sale if you are interested I think it could be possible with the correct gas injectors.
Run as "Old Skool". you probably wouldn't like it. They have to be run "fat" also there is the problem of cold starts. Unless you like carrying a squirt bottle of gasoline with you. Now converted to modern c-controll is a very different thing. $$$$$$$ but much better drivability. Somewhere I have a picture of my graduating class of 67 ITT Bailey Tech schooll. I can see it. Easy way, get the throttle body injection off an old Chev 350 or 454 and reprogram to suit, or go with the Megasquirt controller so you can play with the adjustments.
When I was an outside salesman for an engine parts distributor in the late 90's one of my customers in Poughkeepsie NY had a street car with a mechanical Hilborn set of injectors. He had the best description of what it was like driving non-upgraded Hilborn's on the street with gasoline- "It is basically an on/off switch"
For old look - Hilborn with EFI in the middle. Read MegaSquirt - tons of info. Also lots of examples. Tune with a PC but not that technical to scare you off. Could run dual throttle body injection for bigger CFM. Setting cold weather idle takes time because engine must be cold. Start, tune, shut off & wait for engine to be cold again - repeat. Will also want ox sensor in exhaust but that easy to hide.
On my 63 BelAir I have a late model rebuilt 355 with the Fuel Injection set up off an I-ROC 305. Immediate start up, reliability and super gas milage. Great street car. I couldn't be happier with it. Go for EFI on the nailhead.
I run a mechanical Hilborn on the street, on a modified SBC. It is very docile with great throttle response. It takes a bit of redesign and fabricated parts to make it work well. You will be disappointed with one set up for straight line racing.
