A lil sample Horseshoes These are a hometown original, created years ago by the chef at the "The Red Coach" in Springfield, Illinois on North Grand. It's one of my favorite memories as a kid. This is my take on them. 1 1/2lbs ground beef 1 package frozen steak fries (or homemade) 6 slices of Texas toast or other thick bread Toast bread until crisp. cook to taste 6 hamburgers fry up the French fries. keep both warm while making cheese sauce. Cheese sauce 1/4cup butter 1/2cup flour 4 1/2cups milk 1 1/2lbs sharp cheddar cheese shredded or chopped up into small chunks (Velveeta would be fine) 2teaspoons Worcestershire sauce Cayenne pepper to taste salt and pepper (taste before adding) Melt the butter in a heavy saucepan. Stir in the flour, cook over low heat, stirring, 5 minutes. Gradually stir in the 4 cups milk slowly. Stir and cook until thick. Add the cheese stirring until melted 3 minutes or so, or until the sauce is smooth and hot. add the Worcestershire and hot pepper sauce. If it gets too thick add a little milk to thin. (I have been know to add chili to the cheese sauce about a 2/3 cup) This is how it goes together: toast, hamburger, lots of cheese sauce then the fries on top. Zeke
