Grease. If the surfaces are properly prepared and the gaskets are of good quality, a coat of regular grease (though really not needed) will make removal much easier and may even allow the gasket to be re-used.

The purpose of the gasket is to seal the surfaces; sealants shouldn't be necessary.

I use this. Spray both sides. I’ve never had a leak

It looks to be made of Grafoil which i believe you only install dry. The graphite bonds well to the machined surface and generally can not be reused because it bonds so well.

Best head gasket for a 241 Dodge is #628G. Install them dry.

I’ve done them both with spray copper seal and right out of the package on regular street engines and never had a problem. I would lean towards using the sealer for sure if the surfaces were in doubt but yours have been resurfaced.

We have a can of that, but I'm leaning towards dry based on the type of gasket

Yes. Grease! Regular wheel bearing grease. I still use Sears & QuakerState green grease in gallon cans purchased a long time ago, not too far away from here. Smeared on all 4 surfaces with my fingers. Works well on just about everything except exhaust mainifolds..

Felpro and graphite dry. Steel gets copper spray. No failures so far.
