On the interior, the dash, door frames and some other pieces would match the body color. The seat frame, headliner, sun visors, glove box door, instrument panel and door panels would all be trim color. The P- numbers aren't a paint code, they're a paint combination number, meaning the combination of body color and wheel color. Wheels were usually painted a contrasting color in those years
Trim T-6041 is Pilot Gray, a light shade.. 2R trim colors weren't really an option, the factory would choose a color and use it in all trucks for a year or two before selecting a new color. There was no deluxe version cab offered by Studebaker.

Dr. Google serial numbers and ID plate location:-
    • South Bend truck - Drivers side just below the seat; and
    • Hamilton truck - Drivers side just behind the seat on the side.
The ID plates on the '49 trucks are on the vertical section of the step as you enter the cab on the driver's side. Canadian-built trucks could have the ID plate in a different location from US trucks.
    • 2R-C2 - cab model. They all were this number from 1949-1953; and
    • Cab number - No attempt was made to match cab number with production serial numbers. Cab serial number and not cab number indicates what the order in which your truck was made on the ***embly line.
The engine number, if original may ***ist in narrowing it down to a specific period in time.

Here's a brake kit for them.
Here's a Hemmings article on them.

Mgtstumpy gave you the skinny. The engine number is stamped towards the top under the water inlet.
