Help, stalling problems

I just got everything buttoned up on my 324, everything is within spec to factory standards, she holds a strong idle and when you flash the throttle she revs up and returns to a steady idle. The problem I'm having is that when you try to gradually accelerate the engine chokes up and dies. Now if you push through it choking up, it will rev hard and return to idle. So why is it dying under steady acceleration. Ive been dicking around with this for the last two days and its about to drive me crazy. Any advice would be greatly appreciated
