'Hot' can be caused by several items: lack of fan shroud; not enough radiator; too much advance; water moving too fast through the radiator......Your fan blades should not go past any side of the radiator. Since I don't use any shiverlay parts on my projects, IDK what issues they may or may not cause. .
i recently fixed my over heating problems with a restrictor. water was moving way too fast through the block.
Not ENOUGH initial timing will make one bake! Common on hot rod builds when folks are using all types distributers from who knows where--the timing curves in most are way off from what you need--Plenty of initial timing makes an engine run very cool and idle like a pussycat no matter the cam--but then....you have to Limit the mechanical advance --it is simple and works like a charm. Distributors that idle with say 5-12 degree range have no place in a hot rod--get your unit idling more like 15-20 range and then limit mechanical so that at full advance it is adding just enough to get you to your desired TOTAL advance Car will run cool, idle perfect and be very responsive!
