My little guy (Ardun) is 11 months old and I've had him out in the Hot Rod a few times. I've mounted his car seat in the car and off we go. I've got a pic on our phone I'll post of him. Gotta be safer than the stories co-workers tell of riding on the package tray and when they weren't listening dad would slam on the brakes and they'd fly into the back of the seat!
This will work pretty well but make sure its not just through the floor only. I have a cut down minivan seat in mine and I left the car seat anchors on it just in case I ever actually reproduce and need them. They were effectively welded the seat frame. You might want to find a seat like this and cut off the anchor points and weld them to your seat frame so you are really up to spec if you get pulled over.
Make sure you look into all your laws and regs first, the type of seat you use as well as the number of belt points required vary not just by age, but height and weight as well. I believe in most areas that a simple booster seat usually requires both lap and shoulder belts, and if your kid is small, you may be forced to use some kind of car seat with multiple points. I know that at a really young age (before 1 I believe) you're not even allowed to have them front facing yet - but again, check ALL your regs before you decide what to do.
I've read a little bit over on the Ford Barn about this. There seems to be differing opinions over where to mount seat belts. Since the bodies are mounted to wood, in a pretty good accident, would you want the belt mounted to the body or the frame? I haven't really come to a conclusion myself.
I forgot to mention that I used the large "seatbelt" washers on the underside of the floorpan. They are about a 2.5" O,D. and a 3/8" I.D.
