The headers are like that due to the heads are the GT40P heads and with shorty headers the driver side tube hits the spark plug so ONLY long tube headers will work because the design is just enough different to get to that firewall spark plug . As for the headers cut them straight about 2" out or the longest straight out tubes you can do that on . I would make a drawing but if you look on either Reds or Sanderson's headers , now look up a 55 to 57 Tbird with Y block . Look for the log style headers . If not they will be a log style header for a full size car/wagon . That is a basic style log header .
Basically a straight piece the width of the head's , now bring the tube put from the heads about 3" to 4" away from the heads . Now since they are all in a line to the main tube find the best positions to clear anything in the way so you can take a curved pipe to weld on the end to connect to the down pipe . The front tube just weld a curve to the long log tube , then the other 3 go straight to the long tub . Mark where the other 3 tubes will be on the long tube with a marker . Now that the long tube and drill the holes out for the other 3 tubes go to the long tube . Once you get that all done , just hold the long log tube on the front tube and start tach welding each short tub from the heads to the long tube . Once the thing is tack welded . Take the header off and check to make sure the holes from the exhaust holes to the header are lined up good . If all looks good , then start welding away !
That is how a basic log tube header is made . They really aren't hard to build but it beats anything that is stock .
They are very similar to a Flathead headers . They are simple and to the point plus the work !
They won't cost that much to make because one "U" bend will make the front header tubes for both side , then everything else is straight until you make a piece for the down pipe and weld that to the old exhaust before the coupler.
There you go ! It's really not that hard at all if you just take your time and don't rush anything . Then once you figure out where you want the down pipe to connect , then the 2 other pieces of pipe you cut and weld but measure each separately .

It is simular to this idea but not curved out towards the outside of the car but straight to the down pipe I copied this from Sandersons site . It will give you the idea I am trying to explain .
