Floyd Clymer had several excellent manuals; they should be available from ebay

Look up Les Andrew's books, more than you'll ever need to know....

Several good books on the stock rebuilds through Model A vendors such as Snyder's Antique Auto, Secrets of Speed has lots of information on hopping up the banger. I used the Vern Tardel book to build two flathead powered Model A's with good results. Building a warmed over banger powered 29 Roadster Pickup now, rebuilt engine with Snyder's 5:5 to 1 head, Burns intake with a Holley 94, old Mallory dual point distributor. Got it back to a rolling chassis at the moment.
