Caster can be set by piecutting the wishbone if the back end of the wishbone would hang too low otherwise.
Rear suspension ever other spring out Rear end still sitting a little low in my estimation... will putting the other springs in raise the rear end?

I would advise against that front mount configuration. They will be too close together, and the engine will rock a LOT. Build some small brackets off the water pumps that place the biscuits at the outside frame rails. Or, trade those water pumps for some with the mounting legs on the sides and the no small brackets required. There are TONS of pics on the HAMB of similar mounts.
A stock Model A (and '32-34 four cylinders) has similar mounts, but it also has mounts at the sides of the bellhousing to keep the engine from rocking. Same deal on a '55 Chevy. Unless you are gonna build side mounts on your bellhousing, you need a wider stance on the front.
Like mounting ears on the housing? Ps do u have any links to those pics as I searched until I was blue in the face... And came up with this style as a last resort of sorts...

I had seen a thread somewhere on the HAMB within the last year, but can't find it now.
Thank you for your input! And advice (with a legit reason behind your reasoning) I will follow your advice and go with door #2... 1/4" is thick enough in your opinion?
Could always go with 3/8 if you like. You know what I'd do, I'd borrow a pair of old pumps with the leg already on them, and make my tab match that location. So if you ever wear the current pumps out, you can replace them with the pumps that have built-in legs. Less parts = less clutter. Less clutter = more better.
