I want to run a motorcycle style carb on my 2.3 ford.
what would be a good starting place for carb size?
besides spending a thousand dollars on one already built.

The problem will be size even the monster motors are not 2.3.That is why the inline four bikes have multiple carbs.Maybe a Dellortro or Mikuni might give you the look and be big enough.

Trust me on this, car parts are for cars, bike parts belong on bikes. There is a reason they are different. Ive been through it, and the price for (the look) is worth it.

By "motorcycle style" do you mean side-draft carbs? Weber side-drafts would be my suggestion. As stated above, most actual motorcycle carbs will be too small.

You mean something like this? No, can't do it. It won't work. Everybody knows that.
