Lotsa good info here for you,and should cover almost everything- I have a couple for ya- what size is the carb your running, your timing-base and advance? Those jets are hella big. What do your plugs look like? You would have to have some HP to move that much fuel. Just my 2c. worth.Good luck.

215 with 15 pound cap is below boiling point. If that 215 is constant and temp don't go above that, you're good to go. Gauge might be reading a bit high for whatever the reason, but if the temp isn't climbing above that and recovery tank isn't overflowing, drive it and enjoy it. Can't hurt a thing as long as you pull over if/when it actually gets overheated.

One can always improve cooling by bigger fan, moving fan closer to rad, fan shroud, and of course the obvious, larger rad. But I do have one question; Is the thermostat in the bas-ackwards?

One explaination for the temp stabalizing above the thermostat temp value is that with thermostat closed pump is cavitating (by design). . As thermostat gradually opens, with corresponding flow of coolant increasing, pump efficiency improves, along with increased flow of coolant. As flow increases, at some point, the flow balances the cooling rate.
