Street Rod cooling system

    My Street Rod coolant temp cycles rapidly between 160 and 230 degrees. I have tried 3 different brand thermostats (all 180 deg.) I know the digital dash gauge is accurate because it reads correctly when I use a blocked open stat and it doesn't cycle. The temp sender is in the intake manifold water crossover about 4 inches from the thermostat on a 5.7 Chevy. The problem started when I installed vortec heads. The temp sender was originally in the cyl head and then moved to the intake. It acts like air is trapped but I'm sure it isn't.
    Has anyone experienced this and corrected it?
